Why go

Shanxi people love noodles the way Sichuan people love chilli, and dao xiao mian is the province's pride. The dough is kneaded firm, rested, and then attacked with a specially curved knife. The technique looks reckless — the blade arcs toward the hand holding the dough — but a master shaves dozens of noodles a minute, all of them landing neatly in the pot.

The irregular shape is the appeal: each ribbon has a thicker centre and wispy edges, so every bite alternates between toothsome chew and melt-in-the-mouth thinness. The broth clings to the roughened surface better than any machine-cut noodle.

What to order

The two standard styles are jiangmian (with a soy-braised pork or beef sauce) and tangmian (in broth). Ask for shao rou (braised pork) on top for the richest bowl. A bowl costs 12–20 RMB. Shanxi vinegar is the mandatory finish — pour it in with a clear conscience; it cuts the richness and brightens everything.

Where to find the best

In Datong, look for shops where the shaving happens in the window — that's both good food and good theatre. The area around the Drum Tower has several long-standing names, and the big chains like Dongfang Jian Mian are reliable. If you see a queue of office workers at noon, join it; the noodles cook fresh to order and the pot never stops.
