Why go

Goubuli was founded in 1858 by a man nicknamed Gouzi ('puppy'). Legend says he was so absorbed in his steaming baskets that he barely answered his neighbours, who joked that even the dog wasn't worth his attention — 'goubuli', the dog doesn't care. The buns themselves are small, delicate, and engineered for the perfect bite: thin wrapper, rich soup, and a pork filling with a touch of spring onion.

A dozen baskets are stacked in bamboo steamers and served piping hot. The buns are denser and juicier than Shanghai xiaolongbao, with a heartier, half-leavened skin that holds the broth without tearing.

What to order

A standard set includes pork, three-delicacy (sanxian, with shrimp and egg), and vegetable buns. Order the mixed platter if you want to try several. Each bun should be picked up carefully, dipped lightly in vinegar, and finished in two or three bites. Between courses, sip the clear soup that comes with the set.

Where to go

The Shandong Road branch is the original and still the benchmark. The other famous address is at the Tianjin Eye area, but expect queues at both. A set of eight buns with soup runs about 60–100 RMB. Try them once at the source, then hunt down a tiny local baozi stall for a cheaper, more everyday version.
